The Waterfront Brasserie has a dedicated team of staff with two of the region’s most talented young hospitality professionals joining culinary forces to oversee both front and back of house.

Chef Leigh Morris and restaurant manager, Rickie Kitt, were classically trained at Cambridge Regional College adding a real resonance to ‘locally’ cooked menus. They look forward to welcoming both regular and new customers to The Waterfront Brasserie.
During his time at Wyboston Lakes, Leigh has earned a wealth of experience and won various culinary awards. These include gold medals at Hotelympia’s celebrated ‘Salon Culinaire’ awards (recognised worldwide as one of the industry’s largest and toughest competitions for chefs), at the Conference Centres of Excellence / International Association of Conference Centres’ Chefs’ Challenge and at The Bedford Culinary Olympics.
Rickie draws on world class service levels learned over seven years and will bring exacting yet unpretentious standards of service to The Waterfront Brasserie. The proposition at The Waterfront Brasserie is to bring together a world of knowledge from the award-winning establishment, with cosseting yet non-invasive service levels and superb menus with the ingredients speaking for themselves.
